Holiday Recipe: Coconut Truffles

Lets Get Ready to Celebrate!
What a busy week we all have ahead of us. I am sure that everyone is swamped doing their last minute running before the mad dash on Wednesday to the grocery store. I was looking through holiday recipes today and found this brand new recipe to share with you. I can't wait to enjoy these with our family this Holiday Season! Stay tuned for a holiday recipe sharing later this week!
COCONUT TRUFFLES
This recipe yields approximately 32 truffles...
8 cups powdered sugar, divided
1 (14 ounce) package of flaked coconut
1 (14 ounce) can sweetened condensed milk
1 stick of butter
1 (24 ounce) package chocolate almond bark
1 Homemade Gourmet Basic Cheesecake Mix
In a large mixing bowl, combine cheesecake mix, 6 cups powdered sugar, coconut, condensed milk, and butter. Using stand mixer or heavy duty spoon, combine ingredients until well blended. Dough will be thick and firm. Dust a large serving platter with powdered sugar, roll truffle dough into 1 inch balls (if dough is too sticky to roll into balls easily, add powdered sugar in ½ cup increments and work into dough). Place balls on prepared platter. Repeat until all truffle dough is used. Freeze for 30 minutes or until truffle balls are firm. Break almond bark into large pieces and place in small deep microwave safe bowl. Melt bark on high for 45 seconds; stir. Microwave on high in 15 second increments until bark is completely melted. Lay out a long sheet of wax paper on countertop. Remove truffles from freezer. Insert toothpick in truffle, dip into melted bark until coated, tap the side of the bowl to remove excess bark. Place coated truffle on wax paper and twist toothpick to release truffle; using a small spoon, dab small amount of melted bark on truffle to cover toothpick hole. Repeat with remaining truffles. Allow truffles to dry at room temperature until bark has hardened, about 30 minutes. Store coated truffles in airtight container.

Kelly's Blogger Shower

BRING OUT THE CIDER AND CANDY CORN,
Kelly and Scott's Baby Girl is about to be born!
Check out the Bloggy Baby Shower at:
Dear Kelly and Scott,
About 6 months ago, I found your blog through Angie's. I have been a fellow blog reader ever since! It has been so much fun getting to know your family. My husband and I went through 4 years of infertility, before having our little miracles, Addelynn and Alexander! We will be praying for the remainder of your pregnancy as it will be here before you know it!
To: Mommy and Daddy
From: Baby Harper

If I could speak, here's what I would say: Happy in your arms, I want to stay.
I am your gift, and you are mine too!
Let love bond together, both me and you.
Lets enjoy this time, right here, right now.

Don't let a schedule furrow your brow.
Right now is the time, for me to hold,
when you're less busy, I'll be too old.
Snuggle me tenderly, close to your chest

it is here next to you, I am, at my best.
Your rhythmic breathing and beating heart,
Contentment, and comfort, to me impart.
To see you, smell you, assured by your voice,

all, wonderfully simple, yet help me rejoice.
A cuddle, a kiss, some playful fun and frolic,
Can banish a mood, and prevent nasty colic.
Hold me, hug me, please show me your day

You'll be sharing your love, in a marvelous way.
My learning is best when perched at your side with arms as my classroom and you as my guide.

Please hold me up high, so I might see
All the many wonders, surrounding me.
With time spent close, as you socialize,
My mind expands and clearly I vocalize!
When you work, walk or take a short trip With me safely balanced, upon your hip with muscle tone and self esteem are greater,I'll be walking much sooner, rather than later.
When we are in 'touch', it reduces our stress

We are happiest then, and worry much less.
Safe in your arms, dispels all my fears.
My beaming smiles, replace anxious tears.
To dream of our future is significant too,

And I know a career is important to you.
When I am older, then we'll join in the race
We'll be more able, to keep up the pace.
Right now, what I know, as certain and right

Is that you are my sun, the source of my light.
I don't need many things, expensive or new.
What I need is your love, your time and you.
